Squirrel Bowl


Serves One

Handful or two of rolled oats
Cinnamon
Selection of seeds
A few nuts
Something sweet – agave, maple syrup, sugar…

Add oats and an equal quantity of hot water to a pan on a medium heat.
Stir frequently until it looks like porridge, adding more water if needed.
Remove from the heat and add a splash of your favourite plant milk if you like.
Top with cinnamon (if using), seeds, nuts and a drizzle of something sweet.

A note on toppings:
I bulk buy seeds and nuts and keep them in jars on the kitchen worktop. This works out better financially and also means that as I can see them I am more likely to use them!
My favourites are pumpkin, sunflower and flaxseeds (linseeds) and walnuts, almonds and hazelnuts. 

Switch it up:
Try topping with raisins, dried goji berries or sliced banana from time to time.
Or stir a handful of blueberries or chopped apple into the porridge as it is cooking.
