Burritos

Serves 2 generously 

2 tablespoons of cooking oil (I use rice bran oil)

2 to 3 garlic cloves (crushed or minced)*
6 chestnut mushrooms (each cut into around 6 cubes)
1 teaspoon of cumin seeds (ground)
1 teaspoon of coriander seeds (ground)
1 teaspoon of paprika
½ to 1 teaspoon each of crushed chipotle chillies and cayenne pepper
1 tin of chopped tomatoes
½ vegetable stock pot or cube
1 handful of rice (I use a mix of brown and wild)
1 handful of dried soya mince (I get mine from Tesco)
2 or 3 portobello or flat mushrooms cut into fat strips
1 tin of black beans (add half of the water from the can into the pot and then rinse and drain the beans before adding)
 

To serve:

Chopped red cabbage
Sweetcorn

As much avocado as you can eat
Sweet chilli sauce
Aioli or vegan mayo/soft cheese
Soft Tortilla wraps
(refeshed for a minute in a warm oven)

Cook off two or three crushed cloves of garlic* in a little cooking oil and then add the chestnut mushrooms to the pan and cook down.

Add in the spices. Stir well and then add a tin of chopped tomatoes, fill the same tin up with water, swill it around and add to the pan.
Add the stock pot directly to the pan along with the rice and soya mince (if using).
Go and have a sit down for half an hour, returning every ten minutes or so to stir and add more water if needed.
Check seasoning (salt and pepper) and adjust as needed.
Reduce heat.
Add mushroom chunks and black beans and cook for a further 5 minutes without boiling.
Either serve immediately or allow to cook on low until you are ready to eat.
 

*Or a heaped teaspoon of garlic puree


Variations:

Serve the burrito mix as a chilli, perhaps adding in chopped peppers at the same stage as the chestnut mushrooms. Either accompanied by nachos/toasted tortillas, a jacket potato, pasta or ‘toast points’.
Serve as tacos instead of burritos.
 

Warning:

Rice can be a cause of food poisoning. If you are planning to reheat leftovers (or make extra to freeze) ensure you do so thoroughly. If you have a compromised immune system, are pregnant, elderly, young or are prone to gastrointestinal issues you may wish to cook your rice separately and from fresh for each meal.
